La leche debe estar fr\u00eda, no debe haber sido hervida. Eso se debe a que el t\u00e9 contiene unas sustancias amargas llamadas taninos, cuyo sabor puede ser neutralizado por el de la leche si \u00e9sta est\u00e1 fr\u00eda, pero no si est\u00e1 caliente. El \ufb02\u00faor es una sustancia tan reactiva que ni siquiera puede ser guardada en recipientes de vidrio.
